He then joined the faculty of L’Academie de Cuisine in Maryland and taught there for 18 years. Chef Dionot went on to open, as a partner, Restaurant 2941 in Northern Virginia and it subsequently acquired great acclaim by all who dined there. Two years ago, Chef Dionot relocated to Scottsdale and, thus, began his planning for a culinary school. Chef Dionot will teach a comprehensive program from basic skills, stocks, soups, sauces, eggs, vegetables, meat fabrication, fish and shellfish, grains, pasta, pastry, hors d’oeuvres, Asian techniques, desserts and chocolate. Chef Dionot’s love of teaching is reflected in his enthusiasm to impart his vast knowledge to those who are eager to learn from one of the best.
