In 2008 Classic Cooking Academy (CCA) introduced a full time culinary program that fuses Classic French cuisine with Native American ingredients. The blending of the two was a risk and a given. Yet, the outcome was a success! American Indian flavors accenting the techniques of French Cuisine bring a new flavor and style of food. CCA, pleased with the outcome decided to take the dishes and menus from the full-time program and share it with everyone.
The menu has been thoughtfully and strategically designed to fit everyone's taste. Dishes that are mostly European and American have been accented with American Indian ingredients. It is the subtle flavors that make the largest of impact. CCA knows everyone will enjoy what it has to offer!
